I had this problem as well, starting with the welcome screens during the install. I believe it is something wrong in the Xorg video driver. My video card is a Maxwell based nVidia GTX 750 Ti. Despite the menus being almost completely illegible, I was able to navigate to the Settings Manager / Additional Drivers and install the nVidia proprietary driver 352.63.
