Public bug reported:
Currently snaps can include icon themes and be set up to use those but
that only makes sense if you know the theme of the target system or
themes are somewhat specific to users, ideally we would have support for
system themes so applications look consistant
Side issue, if you decide to include an icon theme in your snap it's
better to have a cache available, snapcraft could help with that
