Just a data point -- I did an English install using gutsy beta i186 alternative CD. Then installed scim-pinyin by myself (scim was installed by default). Now in the up-to-date system (but AFAIK neither SCIM nor OO.o changed since beta release), I can input Chinese in OpenOffice just fine.
