You appear to be installing the shim-signed package in error on a non-
UEFI system. The error message from 'grub-install' shows that grub-
install has autodetected your system as running a PC BIOS, not UEFI and
is thus trying to install the BIOS version of GRUB which it then does
not find on your system. You probably need to run 'apt install grub-pc'
to correct this.
