Amendment to the above: ALSA is installed, but without config files. In my case, this seems to be related to https://bugs.launchpad.net/ubuntu/+source/alsa-lib/+bug/33736, and it corrects itself if my USB sound device is unplugged and replugged after logging in but before starting any of the problematic apps.
