John Pye, thank you for reporting this and helping make Ubuntu better. Regarding the keyboard shortcuts having been changed, I've also noticed this, and found it confusing that it has been changed.
Regarding the speed of typing determines menu responsiveness, this is a separate issue, for a separate report. Despite this, regarding the keyboard shortcut changes, the issue you are reporting is an upstream one. Could you please send the bug to the developers of the software by following the instructions at http://wiki.documentfoundation.org/BugReport ?
