Press F6 twice.
This is just as it's been since dapper. It's not ideal, certainly, and
the gfxboot theme could stand a redesign; though I do kind of feel that
making expert mode hard to find is a feature in a way, since you
shouldn't really use it unless directed by an installer developer.
