Hi Rob,
This scanner does not work out-of-the-box, it needs some specific firmware. 
You need to edit /etc/sane.d/snapscan.conf to point to a firmware called 
"u96v121.bin". 
This firmware can be extracted from the windows driver "Mirascan".
