alright, found the problem. Booted in on a systemrescuecd I had lying
around, and found that /boot/grub/menu.1st was set incorrectly- the root
partition was set to (hd2,0) instead of (hd0,0).

Seems it has something to do with that which I noticed when installing
the first time, that the primary disk (what used to be called /dev/hda)
was displayed as sdc instead of sda (thus resulting in hd2 instead of
hd0).

Im up and running now, all other references to the disk seem to be done
via UUID, which (I've checked) is correct.
