I found, that this can be done be dconf-editor or via command line:
dconf write /org/gnome/desktop/wm/keybindings/unmaximize
"['<Primary><Super>Down', '<Super>Down']"
To restore the original value, use this command:
dconf write /org/gnome/desktop/wm/keybindings/unmaximize
"['<Primary><Super>Down', '<Super>Down', '<Alt>F5']"
