@Mathieu, this is going to be hard to repro, but this is a fresh install
on a Dell 9560, which runs both a GeForce GTX 1050 and Intel GT2 (pretty
sure a revved i915 chipset for Kaby Lake). Using the GUI (Software &
Updates), I noticed that the Nouveau driver was in use (which had
generated an error just after exiting the OS installer prior to initial
reboot). So, I chose the prop. NVIDIA driver from there (375.39), and
let it do its thing. I say hard to repro because from there I opened up
the control panel to walk config options there, so that greatly
complicates the issue of a good repro case. Sorry, but apport tends to
lag a bit.

I will add though that after reboot, I went back to the same gui and
chose the Intel microcode prop. driver. This time, either immediately or
the next time I opened a terminal window (likely the former), I was
walked through the procedure for disabling secure boot.

So, seems to me that this same process should've occurred for the switch
to the prop. NVIDIA driver as these (AFAIK) are both 3rd party drivers
and expect secure boot to be disabled. Either that, or the logic for
installing the NVIDIA drivers doesn't consider state of secure boot.

@Jeremy, I think I answered your question. If I didn't let me know if
you need anything specific.

As I say, this is one of those hard to repro cases with a lot of moving
parts. The secure boot reference may be a big clue.

If you need any specific dumps, etc. let me know.

Good luck

Rich
