I installed gnome-tweak-tool 3.24.1-0ubuntu1 on Ubuntu GNOME 17.04 and verified that the app works.
By the way, dpkg can't handle /usr/bin/python being redirected to python3 and that's obviously not supported anyway. The app also doesn't start when /usr/bin/python is redirected like that. But that's not part of the test case so I'm not too concerned about that.
