@mykesx I already set my drive's mode to AHCI and reinstalled Windows first thing :)
(was setting up a triple-boot Hackintosh on here anyways) but like I said, the issue seems to be with GRUB; Linux boots fine with no issues if I use rEFInd to boot an already-installed Ubuntu on a USB SSD (and the internal SSD can be viewed/written to from Linux just fine once booted).
