I understood the problem :
If we install "dashtodock" from "gnome software" (with the source:
extension.gnome.org), it works without problem.
The bug is present only if you install dashtodock in command line with
the package in the repositories : sudo apt install gnome-shell-
extension-dashtodock
so it's finally not very serious, you just have to use the right method
to install dashtodock, only some advanced user who uses the command line
could get caught.
