#103 did fix it

Adding:

[ipv4]
dns-priority=-42

to system-connections config file
or runing 'sudo nmcli connection modify <vpn-connection-name> ipv4.dns-priority 
-42'
and restarting networkmanager service
did fix dns leaking using ProtonVPN on openvpn for me, thanks.

But i didn't quite understand the problem! Is it the provided openvpn
config file misconfigured or a networkmanager bug? As i said, in others
distros doesn't happend!
