this is odd, from your log:
mysqld: error while loading shared libraries: libaio.so.1: cannot open shared
object file: No such file or directory
Could you check if you have that package and all is ok with it:
$ dpkg -l libaio1
$ dpkg -S /lib/x86_64-linux-gnu/libaio.so.1
If missing install
$ apt install libaio1
# then retry the upgrade
But mysql-server-core-<version> depend on it so this should not be
missing.
Maybe verify the files:
dpkg --verify libaio1
** Changed in: mysql-5.7 (Ubuntu)
