The fix for removing the "--append" flag in
https://bugs.launchpad.net/ubuntu/+source/grub2/+bug/1752767 also fixes
this.
I removed the flag from /etc/grub.d/00_header and updated and on the
next reboot, grub was happily running at 2560x1440 (and with a
background image).
