Your log shows this is an upgrade of shim-signed, from version
1.33.1+13-0ubuntu2 to 1.34.9+13-0ubuntu2, so you have previously had
this package successfully installed; but the error in your logs is:
Installing for x86_64-efi platform.
grub-install: error: cannot find EFI directory.
ESC[1mdpkg:ESC[0m error processing package shim-signed (--configure):
installed shim-signed package post-installation script subprocess returned
error exit status 1
This shows that you have no EFI System Partition mounted at /boot/efi.
Why is this?
The BootEFIContents attachment also shows that you have a fully
populated /boot/efi/EFI/ubuntu directory; but if this is not actually an
EFI System Partition, it will not be visible to the firmware.
You do have a /dev/sda1 partition mounted at /boot. What filesystem is
on this partition?
