Sorry for the delay. I've been away from the country for a bit.

In any event, it is fixed sort of but still a bug. I'll explain.

I make a folder (Test) and I make 3 subfolders (Subtest1, 2, 3) in it.

I rename parent folder Test to Tester.

Tester shows up as a folder in evolution. The 3 subfolders (Subtest1, 2,
3) are gone.

I disable/re-enable the exchange account in evolution preferences.

folder Test shows up again along with 3 subfolders. However, clicking on
any of those 4 folders throws up an error saying the folder could not be
found (and it shouldn't since it does not exist anymore).

Folder Tester shows up only (no subfolders).

If I exit evolution and restart it again, it works perfectly. Test is no
longer there and the subfolders are now correctly under Tester.

So not a terrible bug as I'm able to get an accurate and correct state
of the system with a restart but it is sort of a bug still. Probably not
a high priority one though given the solution is simple to work around
it.
