The problem occurs when sudo:i386 is replacing sudo:amd64.

As the error message suggests please export SUDO_FORCE_REMOVE=yes to
make the operation succeed as a workaround, like this:

sudo env SUDO_FORCE_REMOVE=yes apt install sudo:i386

The original error message can be observed in DpkgTerminalLog.txt:

Desinstalando sudo (1.8.21p2-3ubuntu1) ...
You have asked that the sudo package be removed,
but no root password has been set.
Without sudo, you may not be able to gain administrative privileges.

If you would prefer to access the root account with su(1)
or by logging in directly,
you must set a root password with "sudo passwd".

If you have arranged other means to access the root account,
and you are sure this is what you want,
you may bypass this check by setting an environment variable
(export SUDO_FORCE_REMOVE=yes).

Refusing to remove sudo.
dpkg: error al procesar el paquete sudo (--remove):
instalado sudo paquete pre-removal guión el subproceso devolvió un error con
estado de salida 1

** Changed in: sudo (Ubuntu)
       Status: New => Invalid
