I have this behaviour as well, and I as well use it primarily for the exchange connector. I tend to notice it happen when previewing emails sent by larger commercial companies with images/complex formatting in them. For example, I get a monthly email from my car insurance that is loaded with images, and that will take down evolution without fail.
