A small update on this. I tried another distribution with the same kernel version, and this does not happen... I don't really know why. 0 times out of 10 this does not happen.
Also, when this occurs, triggering the OOM with SYSRQ+F also fixes the issues, but shows that no swap memory was being used, like it couldn't swap properly...?
