This installation looks like it was caused by a corrupted file system. I
notice in the logs

I've marked this bug as incomplete, if you believe I'm in error please
leave a comment as to why, and you can return the status to new.

I suggest you `fsck` your /dev/sda2 (EFI partition) the try again. If it
fails again please change the status of this bug report back to new and
report what you found. If I'm correct the install will succeed after
`fsck`.

I would also suggest using a more modern build of Ubuntu 16.04 LTS
(16.04.6 came out 28-Feb-2019 this year using the then latest kernel
4.15 instead of your used 2017 build which uses a now EOL 4.10 kernel).
