Hi, looks like I finally found the root of my problem - the same.

Got Ubuntu 16.04 and everything worked fine. Then after the updates HDMI 
disappears from the sound output, I checked with pavucontrol and it showed me 
that HDMI is unplugged.
Then I had clean install of 18.04 and now I don't even see HDMI as "unplugged" 
in pavucontrol, just no such device at all.

Laptop ASUS with ATI Radeon 3650.

Please fix this asap as looks like many people around the world use old
laptops with Ubuntu as a video and audio source for TVs via HDMI.
