I think I can answer what caused it (at least the last time). I was doing some work with a few LXC containers and simulating a small network. Essentially I have a terminal running a script that calls some ssh commands to login to the LXC containers and run various things on them then report back to the main box. So in this case it's a custom process that's causing the memory usage.
