Hi Chris,
Happy to try and help. I wiped the partitions and attempt another install to
capture all the data. This was performed with the same installation media.
Here's some additional notes:

Notes:
p6 == Original /boot partition from prior install, selecting to format ext4 and
use as /boot
p7 == encrypted data partition from prior Fedora 31 installation, keeping for
re-use.
-- I'll add this to crypttab / fstab later

root@ubuntu:/# mount /dev/mapper/nvme0n1p8_crypt /target/
NTFS signature is missing.
Failed to mount '/dev/mapper/nvme0n1p8_crypt': Invalid argument
The device '/dev/mapper/nvme0n1p8_crypt' doesn't seem to have a valid NTFS.
Maybe the wrong device is used? Or the whole disk instead of a
partition (e.g. /dev/sda, not /dev/sda1)? Or the other way around?

root@ubuntu:/# mount -t ext4 /dev/mapper/nvme0n1p8_crypt /target/
mount: /target: wrong fs type, bad option, bad superblock on
/dev/mapper/nvme0n1p8_crypt, missing codepage or helper program, or other error.
