I believe the Wayland option gets removed automatically if the login
screen itself failed to start using "Wayland".
To find out what's going on, please reboot fresh as much as you can and
next time the problem occurs:
1. Log in to the only option 'Ubuntu'.
2. Open a Terminal and run:
journalctl -b0 > journal.txt
lspci -k > lspcik.txt
and attach the resulting text files here.
