Public bug reported: The snapshots feature in GNOME Boxes is broken for newly created VMs. This is because GNOME Boxes install VMs in UEFI mode by-default since 3.36, however it caused snapshots to not work[1] so it was changed back to legacy mode by-default in GNOME Boxes 3.36.5[2]. Please, consider updating GNOME Boxes to 3.36.5 in Ubuntu Focal/Groovy.
