The error in the logs is:
mount: /var/lib/grub/esp: wrong fs type, bad option, bad superblock on
/dev/sdb1, missing codepage or helper program, or other error.

This does indeed look like grub is trying to find an ESP on a disk other
than the one Ubuntu is installed to. Could you show the output of 'sudo
fdisk -l /dev/sdb' for a start?
