Using network printer auto discovery via Bonjour was not yet introduced with Gutsy. We have only introduced it in Hardy (via a /usr/lib/cups/backend/dnssd auto-discovery-only backend). In Gutsy only SNMP is used to find network printers (via a /usr/lib/cups/backend/snmp auto-discovery-only backend), so your server does announce itself via SNMP. Announcing itself with a host name without caring that this host name is known in the outside world is a bug of the server. CUPS as it is currently cannot do anything about these announcements. One could make an upstream feature request at CUPS to verify announcements of network printers with host names and to drop them if the IP cannot get derived from the name or to find the sending IP somehow from the packet and replace the unresolvable name by the sending IP.
