Well I finally got around to testing this, using kvm -nographic (and
booting with -kernel/-initd/-append console=ttyS0) and it seemed to work
fine. I agree it would be nice to be able to get grub to run on the
serial console but my understanding is that this is harder than it
should be on intel platforms.

Are those logs from the attempt where you had issues? I don't see any
evidence in the logs of an attempt to update.
