I have a sort-of workaround. I downloaded the relevant dovecot packages (dovecot-core, dovecot-dev and dovecot-imapd) from focal and installed these (a downgrade) over the groovy ones. I also needed libicu66 from focal.
Starting up the dovecot service after that (with exactly the same configuration files) resulted in the SIGSEGVs going away.
