I think I am getting closer to the issue. Yesterday I did a clean
reinstall of 20.10 because I thought something in the update process
from 20.04 to 20.10 had broken. However, even with a fresh 20.10 this
issue persists.

I have the feeling that it may be related to Wayland and HiDPI scaling:
As I am using an external screen I wanted to enable 125% scaling of
Wayland right after my fresh installation. For that I need to enable the
"experimental features":

gsettings set org.gnome.mutter experimental-features "['scale-monitor-
framebuffer']"

Right after typing that command in the console GDM crashed.

As requested by Maciej I attached my journalctl output. As you can see
it is full of errors related to the icons.

Next I will try do disable the experimental features and see if the
problem persists - although this makes my external screen hardly usable
(200% is way too large, 100% to small).
