Do you mean the stats that are enabled via
 "Edit" -> "Preferences" -> "Polling" -> "Poll Memory stats"
And then shown via
 "View" -> "Graph" -> "Memory usage"
?

That would be what is probed from the host and default off as that is
considered "expensive" in terms of CPU burnt for it.

That is based ont he same as dommemstats, could you check in a commandline if 
this works:
$ virsh dommemstat <guestname>
