I can reproduce this issue, but I think that is potentially a security feature of the gnome-shell-extension-desktop-icons. As if you navigate to the folder in Nautilus, then select open, it allows for running the game and not opening gedit. And I can see that the permissions of the file has been set correctly by Steam.
