If you can attach /var/lib/dkms/zfs/0.8.3/build/make.log to the bug
report that would be useful. I'm fairly confident that the failure to
build the 20.10 zfs 0.8.x is because it not compatible with a 5.11
kernel.
If you want the lest 5.11 kernel then I suggest moving to Ubuntu 21.04
as this has a 5.11 kernel and ZFS 2.0.x that is supported on the 5.11
kernels.
