I've just built a new ISO with xorriso but this time i never removed grub_platform and left it all untouched and now the USB stick boots without any grub_platform error and after 20 to 30 seconds of a black screen it boots as normal so it's the way the new ISO is being written to the USB stick as Linux (Bootable)(0x83) instead of GPT.
José Marinho can confirm this if you don't mind building another ISO but this time don't remove grub_platform from grub.cfg just leave it all original and build a new ISO and see if it boots?
