FWIW ruby-defaults/1:2.7.6 looks good in the excuses page, my idea is to finish the rebuilds [1] and then upload a new version of ruby-defaults disabling ruby2.7 and making ruby3.0 the default. The ruby3.0 MIR is also ongoing.
You might be seeing some other ruby packages stuck in proposed but those are related to the rails version bump, I'd like to fix it later if it does not get in the way of the ruby3.0 transition (according to the excuses page it is not blocking ruby-defaults so it should not be a problem for now).
