Trying to build a GNOME snap with a new gnome-desktop the new soname
wasn't being picked, it seems like because of this definition has the
standard path at the end

"PKG_CONFIG_PATH":
"/snap/gnome-3-38-2004-sdk/current/usr/lib/$SNAPCRAFT_ARCH_TRIPLET/pkgconfig:/snap/gnome-3-38-2004-sdk/current/usr/lib/pkgconfig:/snap/gnome-3-38-2004-sdk/current/usr/share/pkgconfig:$PKG_CONFIG_PATH"

the LD_LIBRARY_PATH override is in the right order so without a soname
change the right library would be landed
