So now
# ldd /lib/x86_64-linux-gnu/libwebkit2gtk-4.0.so.37 | grep libgbm
libgbm.so.1 => /lib/x86_64-linux-gnu/libgbm.so.1 (0x00007fd3deade000)
shows that I am using the correct libgbm and all is well.
