Customizing GRUB_DISTRIBUTOR works.
Unfortunately on UEFI, there is one vendor directory on the ESP by
design, so dual booting two copies of Ubuntu on the same disk, with
separate bootloaders doesn't really work.
This is known, but there currently isn't a plan to change this.
