In 5.15 Jammy kernel the config is still there:
CONFIG_SENSORS_ADM1021 policy<{'amd64': 'm', 'arm64':
'm', 'armhf': 'm', 'ppc64el': 'm'}>
In Noble kernel 6.8 which is hwe-6.8 in Jammy the config is removed by:
583e57ba05b7 UBUNTU: [Config] update configs and annotations after rebase to
6.0-rc1

Are you using 6.8 kernel?
From kernel git log, I don't see much reason to remove this.
