It looks like it is not the asus bug, as it is pointing to the correct
shim entry.

It still is an NX bug, but a different one then what I've expected.

It seems like your machine somehow ended up with the NX enforcing shim
instead of the non-NX one it should have received.

To confirm this theory can you check update-alternatives --query
shimx64.efi.signed?
