Sounds like something is still touching your desktop files frequently (like a log file even?). So if you do heavy file operations there then consider disabling the extension:
gnome-extensions disable [email protected] More rarely, we find some people have misconfigured directories and the desktop icons are viewing the wrong location entirely.
