I managed to find the root cause of the issue, the location coordinates
were really off in the settings, manually updated them to correct ones
and now Night Light correctly applies at sunset in my location:
`gsettings set org.gnome.settings-daemon.plugins.color night-light-last-
coordinates "[${LATITUDE},${LONGITUDE}]"`
