I just built an unaltered Pipewire 1.0.9 (the last one in the 1.0 branch), 'pipewire --version' says 1.0.9. Even ditching our downstream patches, Snapshot still has what seems to be the same trouble.
I'd suggest filing a report upstream[1] (maybe it is already covered by [2] or [3]). If you do so, they will probably want you on version 1.0.9, which is their latest.
