OK so, every time it increments the interface number, it stores the new entry in /etc/udev/rules.d/70-persistent-net.rules. My 'original' eth0 had a mac address of 00:16:3e:61:a6:be.
So all I needed to do was specify the desired MAC address in my domain.cfg: # # Networking # vif = [ 'ip=192.168.1.20,mac=00:16:3e:61:a6:be' ] And that fixed the problem.
