Something to note is that in the "normal" server install case the ubuntu-pro-client is part of default install and is somehow provided as part of the install media ISO. In the "minimal" server install case ubuntu-pro-client is NOT part of the default packages and has to be installed manually after the system is running.
I do wonder if the "normal" server install is copying an image where most of the packages have been pre-installed at install media creation time which would explain the installation dates that pre-date my actual install.
