ESP on RAID is not supported in Ubuntu GRUB because we don't create such configurations.
Unlike other distros, there is also no reason to do this because we have multi ESP support in the GRUB package. You can just RAID your regular filesystems and have two (or N) ESPs, one on each disks and GRUB can install itself to both.
