The error "Device '/dev/video0' is not a output device."Aaron is having
lok like that even though it's your virtual camera, it's not presenting
the necessary V4L2_CAP_OUTPUT capability to GStreamer's v4l2sink. This
can happens if the v4l2loopback module is loaded with the
exclusive_caps=1 parameter, which can limits the device to only input
capabilities.

May be you can try to unload and then reload v4l2loopback without that 
restricting parameter.
sudo rmmod v4l2loopback

reload with 
sudo modprobe v4l2loopback devices=1 video_nr=0 card_label="My Virtual Cam"

then try
gst-launch-1.0 libcamerasrc ! videoconvert ! 
video/x-raw,format=YUY2,width=1024,height=768,framerate=30/1 ! v4l2sink 
device=/dev/video0
